The Problem With Hand Washing

In hand washing operations (including power spraying), there is a lot of room for human error. Indeed, workers may not achieve the proper water temperature that’s required to sanitize containers - even after hand washing, food remnants and cleaning agent residue can remain in the seams and corners of containers put back into use. By automating the washing process, food processors are assured that containers are thoroughly and properly cleaned and sanitized every single time.

Manual hand washing is not only subject to more human error, but it can also be more costly to a business. By integrating an automated washing system, companies can save on wasted labor and floor space while also improving on overall production. Instead of manually washing containers with a hose or a pressure washer, thereby introducing risk into the process, more companies are installing systems that automatically meet their specific washing and sanitizing needs. This also adds to the volume capacity of a fluid process operation, and positively impacts product quality.

Papa John’s And Dough Trays

You can’t make good pizza without dough, right? The world’s third-largest pizza chain, Papa John’s, sends thousands of trays of fresh dough from the company’s distribution commissaries to their locations all over the world. Well, fresh dough is a bit more challenging to handle than frozen dough, as it is much stickier and leaves residue in the trays. Therefore, every tray must be thoroughly washed and completely dried before being reloaded with fresh dough for further distribution.

To help meet this stringent sanitation requirement, a Dallas Papa John’s commissary installed an automated two-lane, four-tank washing system in order to clean and sanitize 2,000 dough trays in a single hour. The rapid and consistent washing and drying of these dough trays allows this pizza giant to automatically meet their volume requirements while ensuring consistent cleanliness for their product. Hooray for good dough that makes good pizza!

Laura Chenel’s Chevre

In Northern California, this award-winning goat cheese processing company - a delicious ingredient for pizzas - installed a customized washer to clean and sanitize its process buggies, a vital component of cheese processing. These process buggies are used to transfer cheese from the mixer to the packaging department at their Sonoma County plant. While the buggies handle millions of pounds of cheese annually, the cheese is processed in smaller batches of roughly 400 pounds at a time. Thus, these buggies are an integral part of the process stream, needing to be cleaned and made ready for the next cycle.

Prior to their new facility, workers cleaned the buggies with spray hoses in an open area of the plant. With a new automated washing system, it saved the goat cheese company labor for spray washing and does a much better cleaning job than a human with a spray hose.
